Preliminary study on the keeping quality of pasteurized carabao's milk

Raw and pasteurized carabao's milk was tested for their total count, clot-on-boiling test and titratable acidity. These tests were also done on pasteurized milk samples kept at 30 deg C and at refrigeration temperature of about 9-10 deg C at different storage periods. The keeping quality tests show that all raw and pasteurized carabao milk samples examined were considered suitable for human consumption. Pasteurized carabao's milk could be stored for 12 hours at 30 deg C before any visible curdling occured. However, carabao's milk stored at refrigeration temperature (9-10 deg C) remained palatable even after 3 days. Clotting was observed on carabao milk samples with acidity of 0.26 percent lactic acid
