Mold growth in stored rice noodles as affected by packaging materials, storage temperature and "Negamold"

The effects of packaging materials, storage temperature and "Negamold" on mold growth in stored rice noodles were investigated. The four packaging materials evaluated were LDPE (low density, polyethylene, 30 ?), HDPE (high density polyethylene, 50 ?), 3 layers (OPP 20/EVAL 15/LDPE 40), and OPP/CPP. For each packaging material, four samples were prepared: two each with and without addition of small packets of "Negamold" prior to sealing. The rice noodles had initial moisture content of 59.5%. One set of samples was stored at 5 deg C and the other at 25 deg C. The samples were evaluated for presence of molds after 6, 12, and 18 days of storage. The use of refrigerated temperature in storing the rice noodles was found effective in preventing mold growth. All the samples stored at 5 deg C regardless of packaging materials and presence or absence of "Negamold" remained free of molds even up to 18 days of storage. At 25 deg C storage, the use of "Negamold" retarded the growth of molds for the rice noodles packed in all but one (LDPE) packaging materials on the 6th day of storage. At 12 days, effectiveness of "Negamold" failed for HDPE. However, the rice noodles packed in OPP 20/EVAL 15/LDPE 40 and OPP/CPP remained stable until the last day of evaluation with the presence of "Negamold"
