A comparison of modified atmosphere packaging (MAP) verses non-packaging late-season field harvested pepper Keystone (bell) and NuMex R-Naky (long) varieties stored at 8 degree, 14 degree and 20 degree centigrade revealed that MAP significantly reduced weight loss, registered normal turgidity and enhanced postharvest longevity at each storage temperature. The disease rating for Keystone was higher than NuMex R-Naky after three and five weeks at 8 degree centigrade. Packaging (17.5 cm x 20 cm x 45 micron) without eight 26-gauge needle holes reduced colour and disease development as compared to packaging with holes. Packed peppers lost their freshness and marketability primarily due to red colour development and/or disease incidence.
