Preliminary study of the effect of pyramid energy on the physico-chemical and microbiological characteristics of Indian Murrah buffalo milk (pasteurized)

The effects of different types of covering (no geometrical cover, cubical box and pyramid model) at different length of exposure and microbiological characteristics of pasteurized buffalo milk were determined using the split plot design in complete randomized design (CRD). The types of covering did not influence the fat, moisture, total solid, solid non-fat percentage and specific gravity of milk. The increasing length of exposure period caused a reduction (P0.05) of fat, total solid, solid non-fat and increased (P0.05) in the moisture content of milk. The protein and specific gravity of milk were not affected by the interval of exposure and types covering. Results of acidity test, bacterial count and methylene blue reduction test on samples showed that pyramid energy has a marked inhibition effect (P0.05) on the microbial growth of microorganisms. Likewise, microbial population increases significantly with increasing time, i.e. 6.8 and 10 hours. Milk in pyramid model remained unspoiled after 10 hr. exposure
