Yield and oil quality assumes a primordial role when we are about to choose a cultivar and define the harvest optimal time. The aim of the present work was to study the qualitative and quantitative olive oil behaviour of 'Cobrancosa? and 'Picual? cultivars bred in an orchard of Herdade do Reguengo, Elvas at the end of three campaigns of observation. The statistique analysis shows that 'yield' and other oil quality parameters are significantly different between cultivars. Environmental conditions and genetic determinism must be underlined on the cultivars behaviour
