Lactulose in market milks

Lactulose content as an indicator of heat treatment of milk was determined in samples of various kinds of milk of Czech provenience. The content of lactulose differed significantly (P 0.01) among various kinds of milk. A very low content (35.5+-9.7) mg/l, close to the detection limit of the method, was found in highly pasteurized milk (pasteurized at high temperature). Low lactulose content was also found in dried milk (229.7+-69.5) mg/kg. In UHT milk samples, the lactulose content was dependent neither on lipid nor on lactose contents. Lactulose concentrations were at all samples below the limit necessary for differentiation of UHT from the sterilized milk. Lactulose content was markedly high (2451.3 _ 156.8) mg/l in sterilized (condensed) undiluted milk samples
