d-Limonin is a major bitterness compound in lime juice and a major constituents of lime oil (over 90 percent) in the portion of lime peel. Several studies have been shown that d-Limonin possess Cancer-Chemopreventive and Anticarcinogenic properties. To investigate the value added of lime juice and lime by-products from industrial lime juice production, d-Limonin and lime oil were determined from 20 samples of lime juice and lime peel. The result showed d-Limonin contents of lime juice and lime peel were 52.12-291.92 mg/L and 172.49-1049.80 mg/L, since Lime oil contents of lime juice and lime peel were 0.0534-0.1688 percent and 0.3226-0.7181 percent respectively. However, d-Limonin in processed Lime oil and Lime Slurry were 32,697.90-53,855.10 mg/L and 1330.86-1382.56 mg/L. The application in nutritional health benefits of lime juice and lime by-products were suggested for industrial lime juice production.
