The thesis deals with the development of biotechnology of obtaining lactic acid and its salts. Based on the analysis of chemical composition of cereal meals, the opportunity is shown to use them as a carbohydrate substrate for the lactic acid biosynthesis by lactobacilli. A process of enzymatic bioconversion of starch polysaccharides of the cereal meals and their mixtures by their own enzymatic systems, amylases and barley malt is studied. The dynamics of accumulation of calcium lactate and lactobacilli cells on the enzyme lysates of the cereal meal is investigated. Technological schemes of lactic acid production as well as of calcium, iron, magnesium lactates are developed
