[Raw materials for canning industry enterprises]

An thorough review of raw materials used by Ukraine' canning industry is provided. The Ukrainian canning industry is pointed out to allow reducing losses of agricultural production, labour and time for food preparation in home conditions; diversifying menu; providing the population by seasonal products all the year round. The canning industry production is subdivided into fruit and vegetable, meat as well as meat and plant, milk and fish. The plant raw materials are characterized dependently on their botanic properties. All fruits are subdivided into four main groups: cereals, drupaceous, berries and nuts. Tropical and subtropical fruits are isolated in a separate group. All vegetables are subdivided into two groups: fruit and vegetative. Domestic and wild animals' meat and subproducts are used for meat canning production. The milk products canning is guided by four basic principles: biosis, anabiosis, cypoanabiosis and abiosis. The fish canning production involves the raw materials as follows: from inland reservoirs - cat-fish and others, from the Azov-Black Sea basin - sprat, khamsa, sardelle, bullhead and so on
