Fatty acid composition of Amaranthus sp. seed oil

The research material was the seed of the following Amaranthus species: Amaranthus caudatus, Amaranthus moleros, Amaranthus mantegazzianus and two Amaranthus cruentus genotypes originating from America. There is more oil in the seed of various Amaranthus L. species (6.27%) than in cereals. The results of the investigations of fatty acid composition proved it to be a typical plant oil. Mean content of unsaturated fatty acids is 68.5%.
