[Antifungal activity of 6-O-acylsucroses]

Antifungal activity and surface properties of 6-O-dekanoylsucrose, 6-O-undekanoylsucrose, 6-O-dodekanoylsucrose, 6-O-tridekanoylsucrose, and 6-O-tetradekanoylsucrose were tested on the strain Aspergillus sp. DMF 0501. 6-O-tetradekanoylsucrose (1 mg/mL) inhibited the formation of colonies by 30 %, while the inhibition by 6-O-undekanoylsucrose (0.7 mg/mL) was 40 % or more. The other three substances tested had no effect on colony formation. The growth rate of Aspergillus colonies was inhibited by all the 6-O-acylsucroses tested. This inhibition increased with increasing acyl length in the monoester molecule.
