A study on producing honey from coconut skim

The objective of this research were to increase the utilization of coconut skim and to find the effect of sugar on the quality of coconut honey. Complete randomized design was used in statistical calculation of this research. Four sugar level were added into coconut skim, and each treatment was triplicated. Results from protein and fat content evaluation showed that coconut skim was a good raw material in producing coconut honey. Sensory evaluation showed that coconut honey produced from 250 ml coconut skim with 100 g and 150 g sugar was favored by the panelists
