[Improvement of tempe processing from tofu waste]

English. The solid waste or by product of tofu processing has not been used, although the protein content is still high. Actually it can be used as protein source food material. One of the use of tofu solid waste is to be processed into tempe gembus. The addition of other waste product which still has nutritive value can increase the nutritive value of tempe gembus produced. An experiment which add corn powder to tofu solid waste has been carried out. The addition of peanut cake to tofu solid waste increased the fat content of tempe gembus, while the addition of corn powder to tofu solid waste has no effect in the nutritive value of tempe gembus

Bahan sisa atau limbah padat pembuatan tahu belum banyak dimanfaatkan, padahal kadar proteinnya cukup tinggi, sehingga dapat digunakan sebagai bahan makanan sumbe protein nabati. Salah satu pemanfaatan ampas tahu untuk makanan adalah dengan diolah menjadi tempe gembus. Penambahan bahan sisa lain yang masih mengandung zat gizi dapat meningkatkan nilai gizi tempe gembus yang dihasilkan. Telah dilakukan penambahan tepung jagung ke ampas tahu dan penambahan bungkil kacang ke ampas tahu. Ternyata penambahan bungkil kacang ke ampas tahu dapat meningkatkan kadar lemak tempe gembus yang dihasilkan
