Evaluation of the carcasses and muscular tissue of lambs fattened on the pasture

The aim of studies was to evaluate the dressing value and chemical composition as well as the level of some elements in muscular tissue of the lambs extensively fattened on a pasture and intensively in a system indoor feeding. The results showed that the lambs intensively fattened were characterized by higher dressing efficiency at similar share of valuable cuts in carcass and significantly higher adiposity in relation to those fattened on the pasture. System of rams' maintenance differentiated the content of dry matter, fat and ash in muscular tissue, while the genotype affected the ash level only. Irrespective of the fattening system, the contents of Cd, Pb, Zn and Cu did not exceed the norms recommended for foodstuffs, at higher values recorded in animals'tissues fed with the concentrates
