Emu's and ostrich African eggs were subjected comparing with chicken's eggs. The chemical compound, content of cholesterol and technological properties were evaluated. It was indicated that emu's, ostrich African and chicken's eggs were very similar in chemical and functional properties. Thus they can be successfully used in food industry. Besides it is very important - low content of cholesterol in studied eggs
