Some physicochemical properties of starches of different origin

It was shown that rice and oat starches had the smallest, and potato starch the largest diameter of granules. Among cereal starches, oat starch had the greatest, and waxy maize starch the smallest fat and phosphorus contents. Potato and tapioca starches were characterized by a low fat content. Potato starch had also a high phosphorus content. Rye starch contained the greatest and waxy maize the smallest amount of amylose. The investigated starches varied also in their reducibility. The highest values of swelling power and water solubility at 80 deg C were found in potato, tapioca and waxy maize starches and the lowest in rice and oat ones.
