Climate conditions represent significant factors which have more or less significant influence on yield and quality of wheat. In this paper, influence of rainfall disposition in spring and preharvest period and insolation in different wheat growing regions in Serbia (Serbia&Montenegro) on wheat quality parameters (protein content, sedimentation value and amylolytic activity) has been analyzed using standard statistical methods. The results point at highly significant influence of rainfall in June on wheat amylolytical activity in 2001. Effects of insolation on protein quality increases with the approachment of harvest and had the highest influence in the last decade of June.
