Characteristics of the production and usage of animal rennet in dairy industry

Yugoslav cheese production in the dairy industry uses mostly imported rennet (animal and microbiological). This kind of rennet is very expensive, and production is depending on import. Using young calves for the chymosin production is also expensive. Because of that, the pepsin production from cheap domestic row material (which is present in enough quantities) is very interesting from both aspects, way of production and possibility of substitution of chymosin. In our experiments liquid and dry pepsin was separated. It shows satisfactory activity and microbiology, which is very similar with rennet on our domestic (Yugoslav) market (liquid rennet) and imported rennet (dry rennet), This kind of research will be continued with purpose of further investigations connected for production and quality of rennet which is used by dairy industry.
