Study on phytase-producing yeasts

A two-stage screening-procedure was implemented involving phytase-producing yeasts, which resulted in the selection of Candida melibiosica 2491, posasessing a high capacity for synthesis of an intracellular enzyme. The strain showed two maximums of phytase production - on the 8th h and on the 36th h of the growth in a nutrient medium containing glucose 10 g/dm3. Adding KH2PO4 and Na-phytate as supplementary sources of phosphorus heavily limited the biosyntesis process.
