Difference among traits of meat quality according to sex in Czech Large White pigs

A content of intramuscular fat (IMF) in gilts and 26 hogs was determined in the muscular longissimus lumborum et thoracis by Soxhlet extraction. The hogs had 0.95 percent and gilts 0.51 percent pf IMF. The lean meat contents was respectively 54.82 and 55.91 percent, thickness of backfat 1.84 and 1.89 cm, share of the main meaty parts in carcass (ham, shoulder, spare rib, loin) 52.37 and 53.32 percent
