The grain of four varieties of winter wheat: Elena, Juma, Cobra and Roma were examined. Physical and chemical characteristics of the grain were checked as well as a laboratory milling at the Quadrumat Senior mill. It was found that grain quality parameters (except for total protein content) were influenced more by a cultivar and weather conditions than by a crop production system. The winter wheat varieties were characterized by high milling properties independently on a crop production system
