Histamine in canned Tuna fish

In this study, 70 frozen tuna fish samples as raw material for canning production and 160 canned tuna fish samples were analysed for histamine content by using spectrophotometric method. In the frozen tuna fish samples, 5-137 mg/kg histamine content with average value of 23 mg/kg were determined. Canned tuna fish samples gave 5-48 mg/kg histamine values with average value of 28 mg/kg histamine content. All of the samples showed below 48 mg/kg histamine value. They didn't reach 80 mg/kg histamine which is hazard value for human health except one sample gave 137 mg/kg histamine
