Changes in red colour and pigment content of attached mango fruit skin with and without bagging

Levels of the pigments chlorophyll a, chlorophyll b, total chlorophyll, anthocyanin and beta-carotene were measured in the skin of mango (Mangifera indica Linn. cv. Kent) fruits, still attached to the tree, 30, 60, 90, 105 and 115 days after full bloom. Fruits protected with brown paper bags were compared with controls without bags. The levels of chlorophyll a, chlorophyll b, and total cholorophyll declined, while anthocyanin content increased as the fruits became older. The pigment content of the control group was greater than that of the bagged group. The increase in red peel colour did not occur in the bagged group until the end of the experiment. Sunlight affected either the red peel colour or the level of both anthocyanin and chlorophyll in the mangoes. However, there was no significant difference in beta-carotene content between the control and bagged groups. It is thought that this pigment is not influenced by sunlight.
