Comparison of microbiological quality in exported ice-cream from two manufacturers

Comparative enumeration of microbial qualities of two ice-cream manufacturers were investigated. Seventy three samples from each manufacturer, collected between June 1997 and March 1998, revealed that 12.33 percent of the ice-cream from the first manufacturer and 1.37 percent of the ice-cream from the other did not meet the Ministry of Public Health's and the APHA standards, due to the high level of total bacteria count and the contamination of Escherichia coli as a food index. However, none of the food-borne pathogens were detected. The average quantity of total bacteria (log CFU/g) from the first and the second manufacturers, are 3.79 and 2.59 with the average E. coli (MPN/g) equals 1.50 and 0.05, respectively. Thus, suggesting that the microbi6l qualities of products from both manufacturers are significantly different (p0.05). Moreover, the ice-cream from the first manufacturer apperared to be inferior than the counterpart. Investigation for the improvement of product qualities, to meet an international standard, should be established for the first manufacturer.
