Isolation, screening and identification of lactic acid bacteria from Thai fermented foods

Eightly strains of lactic acid bacteria were isolated from Thai fermented foods. These strains were screened from antagonistic activity against indicator species by agar spot method. Five indicator species used were Escherichia coli, Vibrio parahaemolyticus, Salmonella typhimurium, Bacillus cereus and Staphylococcus aureus. Twenty strains, which demonstrated inhibition zones 10 mm against at least three indicator species, were chosen for further identification. Sixteen strains of Lactobacillus plantarum, three strains of L. bavaricus and one strain of L. brevis were identified.
