Extraction of durian syrup by pectinase, cellulases, and amylases under simultaneous and sequential reactions

Extraction of durian syrup by three enzymes; pectinases cellulases and amylases under simultaneous and sequential reactions was studied. It was found that the synergistic activities of three enzymes under simultaneous reaction at concentration of each enzyme of 0.5 percent (v/w) incubated in durian pulp with no addition of water at 45 deg C for 2 hours improved yield of durian syrup of 32.19 percent. Under sequential reaction, the incubation of the durain pulp with 0.5 percent (v/w) of pectinase at 45 deg C for 2 hours followed with the cellulose hydrolysis using 0.5 percent (v/w) of cellulase at 50 deg C for 1 hour and the starch hydrolysis using 0.5 percent (v/w) of amylase at 45 deg C for 3 hours respectively, improved yield of durian syrup of 44.04 percent.
