Technological preparation of sugar beet pulp for its utilization in functional food processing

During the technological procedure of sugar beet processing the significant amount of spent sugar beet pulp is obtained as the feed component in livestock feed production. Sugar beet pulp is also suitable for the production of additives which contribute to the higher level of dietary fibers in food products. The presence of polyphenols, phenolic acids and ferulic acid referes on its antioxidative characteristics which could be important for functional food processing. The technological preparation of sugar beet pulp significantly affects the quality of the fractions obtained, that is determinant in selection of raw material for biomass production, as the protein source for foods and feeds, by microbiological conversion of sugar beet pulp using Polyporus squamosus.
