External factors and their impact on the metabolism and technological quality of stored sugar beet

The aim of this study was to compare losses in weight and sugar content of sugar beet roots stored either in an unprotected storage or in a storage covered by a layer of cut straw. The effects of some external factors on the losses were evaluated too. Weight and sugar losses were more pronounced in uncovered than in covered storage. The losses increased with the increasing temperature and moisture content. The losses increased with the increasing temperature and moisture content. The covered storage showed a considerably lower temperature fluctuations. In conclusion, the quality of sugar beet roots was better preserved in covered than in uncovered storage.
