English. The objective of this research was to study the characteristic of endosperm content in ten coconut cultivars as industrial raw material. This research was conducted on laboratory of Balai Besar Industri Hasil Pertanian (BBIHP), Bogor. Coconut samples were taken from Instalation Garden of Coconut Cropping Pakuwon, Sukabumi, West Java, that were Genjah Kuning Nias (GKN); Genjah Kuning Bali (GKB); Genjah Raja (GRA); Genjah Salak (GSK); Genjah Kuning Jombang (GKJ); Genjah Hijau Nias (GHN); Dalam Tenga (DTA); Dalam Bali (DBI); Dalam Sawarna (DSA) dan Dalam Palu (DPU). The research was designed as a complete randomized with three replications, while the treatments were ten cultivars. The result showed that moisture, protein, lipid, coarse fibre and free fatty acid contents were significant influence and have variation. The moisture ranges between 49.10-60.03 percent, with the lowest was shown by GHN that was 49.10 percent; the protein content ranges between 2.60-4.53 percent, with the highest was shown by GHN was 4.53 percent; the lipid content ranges between 21.03-33.45 percent, with the highest was shown by GHN that was 33.45 percent; the coarse fibre content ranges between 6.92-10.40 percent with the highest was shown by GKB that was 10.40 percent and the free acid content ranges between 0.03-0.15 percent, with the lowest shown by DTA and DPU that was 0.03 percent

Penelitian dilaksanakan di Laboratorium Balai Besar Industri Hasil Pertanian (BBIHP) Bogor. Sampel dari Instalasi Penelitian Lolitka, Pakuwon, Sukabumi, Jawa Barat. Kultivar kelapa yang digunakan adalah: Genjah Kuning Nias (GKN); Genjah Kuning Bali (GKB); Genjah Raja (GRA); Genjah Salak (GSK); Genjah Kuning Jombang (GKJ); Genjah Hijau Nias (GHN); Dalam Tenga (DTA); Dalam Bali (DBI); Dalam Sawarna (DSA) dan Dalam Palu (DPU). Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 10 perlakuan dan 3 ulangan, sebagai perlakuan adalah kultivar kelapa yang terdiri dari 10 kultivar dan setiap kultivar diambil 15 butir kelapa sehingga jumlah keseluruhannya menjadi 150 butir kelapa untuk dianalisis karakteristik daging buahnya (kadar air, protein, lemak, serat kasar dan asam lemak bebas sebagai asam laurat). Hasil penelitian menunjukkan bahwa kadar air, protein, lemak, serat kasar dan asam lemak bebas berpengaruh nyata dan bervariasi. Kadar air berkisar antara 49.10-60.03 persen terendah diperoleh pada GHN 49.10 persen; kadar protein. Kadar air berkisar antara 2.60-4.53, tertinggi diperoleh pada GHN 4.53 persen; kadar lemak berkisar antara 21.03-33.45 persen, tertinggi diperoleh pada GHN 33.45 persen; kadar serat kasar berkisar antara 6.92-10.40 persen, dan asam lemak bebas berkisar antara 0.03-0.15 persen, terendah diperolah pada DTA dan DPU yaitu 0.03 persen
