This study examined the fertilizer system and growing method according to the regions and meters above sea level in order to stabilize the quality and quantity of production sake brewery rice ""Yumesansui"". 1. This result suggests that thousand kernel weight was increased by reducing the basic fertilizer, restraining hyper tiller and the number of paddy in a unit area. In addition, it stabilizer quality of production and decrease lodging. When the case of 2 mm young panicle, number of paddy is increased and thousand kernel weight is decreased in the top dressing time. There are very few lodging, thousand kernel weight is increased in case of 5 mm young panicle in the top dressing time, therefore first ear manuring time is set up at 5 mm young panicle, second ear manuring time is set up after 10 days. The protein content of grain was higher by adding fertilizer. 2. There is a tendency to lower the sea level, higher white core occurrence rate and white core growth rate. In a region lower sea level, it becomes higher white core growth rate and white core occurrence rate because of the higher temperature in ripen. In a region higher sea level, low temperature decrease the thousand kernel weight and the crop should be unstable. In order to stabilize the crop, it is effective to raise the planting density. And it also restrain hyper tiller which increase thousand kernel weight and press for improvement in quality. 3. It established the planting guideline for high quality and stable production of Yumesansui at mountainous region in Aichi prefecture.
