Components of taru-sake [sake stored in the cedar cask]

Components of Taru-Sake (the sake stored in the cedar cask) were analyzed by GC-MS (gas chromatograph-mass spectrometry). Fifteen sesquiterpenoids were separated from hexane soluble part of Taru-Sake. The principal components of sesquiterpenoids were delta-cadinene (sesquiterpene), cubenol, epi-cubenol, cedrol, beta-eudesmol (sesquiterpene alcohol), cryptomerione (sesquiterpene ketone), and so on. The main Sesquiterpenoids of Taru-Sake were sesquiterpene alcohol. Content of sesquiterpenoids in Taru-Sake tended to increase as the storage period became longer and the storage temperature rose. Analyses of the components in the 0-100% (v/v) ethanol extracts from the cedar cask sawdust showed that the increase of ethanol concentration lead to the increase of sesquiterpenoids content and to the high proportion of sesquiterpene. Sesquiterpenoids content in commercial Taru-Sake was not correlated with acetaldehyde content and with coloration value (abs. 490nm).
