Effects of applied fertilizers and soil temperature on free sugar contents in storage roots of sweet potato [Impomoea batatas]

Summary In order to clear the relevance between growth conditions and sweetness in storage roots of sweet potato, we investigated effects of applied fertilizers and soil temperature on free sugar content in them. High soil temperature and difference with amounts of the nitrogen and potassium fertilizers had little effect of free sugar content in storage roots, However, maltose content in storage roots grown under low soil temperature condition has increased. It is known that the maltose content is influenced by both v-amylase activity and starch properties such as value of onset temperature for gelatinization. Grown under low soil temperature condition, v-amylase activity in storage root has decreased. Therefore, it was considered that the change of starch properties caused the high level of maltose in storage roots under this condition. There was little correlation between free sugar content and characteristics related to yield and form of storage roots, suggesting that it is difficult to evaluate the sweetness of storage roots from these characteristics.
