While analyzing the information about the production and consumption of milk and dairy produce in Latvia during the years of 1999-2001, the authors make suggestions about the solution of problems. A special attention in the report is paid to the concentration and specialization of milk processing plants to conform to the requirements of EU. The authors investigated all the development cycles of milk and milk purchasing, selling and consumption.
