[Evaluate the possibilites of using fast methods for estimation of the quality of poultry carcasses and meat]

The results of this project showed, that fast methods of meat quality evaluation can be used in case of turkey carcasses, and meat. The carcasses measurements by the video image analysis can be used to estimate the yield of most valuable cuts: breast, part and thigh and meat trimmed from them. For the evaluation of quality of "hot" and chilled turkey meat trimmed from them, the estimation of pH value and parameters of colour lightness with the use of MINOLTA CM-2600 can be applied. This methods can not be used for quality evaluation of carcasses and chicken meat due to low correlation coefficient
