Mathematical modelling of microwave-convection drying of agricultural raw materials on the example of apples

A mathematical model of microwave-convection drying of material with cellular structure has been presented. On the basis of the proposed model, the calculations were done for different models of control with supplying power. Temperature and moisture distribution inside the dried particles were estimated. On this basis the rates of pressure increase in the cells as well as pressure differences betwenn the cell films were calculated. Results of simulations have shown that an appropriate microwave power control enables the arbitrary control of both temperature and pressure distribution inside the dried material. In the following part of the work, results of experimantal verification of the model was presented. The verification was carried out on the example of microwave-convection drying of apples of Idared variety. In the experimental studies the same process parameters as the data in theoretical simulation were applied. Results of simulations were compared with the experimental results. Good coincidence of the results proved the model validity
