Chemical composition and mineral elements in sheep milk from the Sredna Stara planina mountain region

It was observed that the milk of studied Karakachan sheep had a higher dry matter, solids non-fat, milk fat and total protein content compared to Tsigai sheep milk. The principal components of sheep milk - dry matter, milk fat, and total protein, exhibited the typical ascending curves from April to July (with the exception of milk fat in May for Tsigai sheep). There were no differences between Karakachan and Tsigai sheep with regard to macroelements calcium, phosphorus, potassium and sodium as well as the trace elements zinc and manganese. The calcium-phosphorus ration was 1.42 for both groups of milk and the potassium/sodium ratios were 3.31 and 3.23 in groups I and II respectively. The milk from studied Tsigai sheep was with a higher magnesium and copper content whereas that of Karakachan sheep - with a higher iron content.
