Fatty acids and lipid index of fat sheep milk

The study was performed on bulked sheep milk. The samples were obtained during the lactating period of 2 groups of ewes, representatives of 2 different genotypes of milk croses in their first lactation. Group I - improved local Stara Zagora ewes (with 1/8 blood of East-Friesian rams) and group II - three-breed crosses on the basis of local Stara Zagora ewes with PlevenBlackhead rams as second breed and East-Friesian rams as a third breed. It was found out that the sum of capronic, caprylic and capric acids in the milk of both groups of ewes was similar - 11.64% in group I and 11.88% in group II. There were no differences between the groups with regard to the content of monounsaturated fatty acids in sheep milk fat - C10:1, C12:1 and C16:1. Higher oleic acid content (C18:1) was observed in the sheep milk from group II. The most constant fatty acids rations were C18:0/C16:0/C12:0/C10:0/C18:1/C16:0,C4:0/C6+8 and C18:3/C18:2. The amount polyunsatur ated fatty acids was higher in the milk of three-breed crosses compared to that of two-breed crosses, that was an indicator of the easier oxidation of milk fat in the former group. The saturated/polyunsaturated fatty acids ratio was higher in the milk of improved Stara Zagora ewes. Although the difference between the groups was not statistically significant, the milk of two-breed crosses exhibited closer value of the lipid preventive score and fat content to three-breed crosses.
