The influence of lairage time on the quality of M. [Musculus] semimembranosus from the halves of two-breed crosses

The study included two groups of two-breed pig crosses (LWxSL), 33 animals in total. The first group of the examined two-bread pig crosses was transported to slaughter directly from the transport vehicle (n=15), and the second group, after lairage of 24 hours (n=18). The examined Musculus semimembranosus (MSM) on the halves of two-breed pig crosses of both groups are on the average PFN (pale, firm and non-exudative), based on the criteria for pH(k), WHC(k) and colour lightness (L*). Occurrence of MSM of normal quality (RFN) is low 26.6% (without resting) and 16.66% (resting for 24 hours), and it can be recommended that lairage time is much shorter than 24 hours, as well as that it cannot be done without resting.
