Undesirable appearance of cooked canned ham

In this paper undesirable properties of cooked canned ham appearance were determined: surface appearance and cross section appearance. Cooked canned hams, type Cooked Shankless Ham with natural juices without gelatine added, flat shaped, weighting 6.356 kg, were examined. Based on the results of examinations obtained in the study, the following conclusions may be drawn: undesirable properties of cooked canned hams appearance are: difficult separation of foil from the contents of the product, insufficiently even surface, uneven surface under the lid, yellow discoloration along the edges of the contents, vacuolas on all surfaces of the product, vacuolas on the surface of the product under the lid, and spotted yellow discoloration on the surface of the product; and undesirable properties of the appearance of cross-section of cooked hams are: insufficient consistency of muscles, vacuolas, insufficient consistency of colour, comminuted muscles, insuffiecient separation of fatty and connective tissue, PSE meat, marbling of muscles, spotted bleedings and spotted yellow discolorations.
