Evaluation of total carotenoids and ascorbic acid in osmotic pretreated guavas during convective drying

English. Degradation of ascorbic acid and carotenoid content in osmotic pretreated and convective dried guavas was investigated. The osmotic dehydration was performed in a semi-continuous flow osmotic contactor at 40 deg C for two hours with sucrose solution at 60% (w/w). Pretreated guava sticks were dried at 60 deg C to 20 and 11% moisture (f.w.) content. The results showed that the carotenoid retention varied from 66 to 70% and that the one of ascorbic acid was around 20 to 35% of the original values in osmotic pretreated and dried guavas

E´ stato esaminato il processo di degradazione dell´acido ascorbico e del contenuto in carotenoidi in frutti di guava pretrattati osmoticamente ed essiccati con processo convettivo. La disidratazione osmotica è stata ottenuta grazie all´utilizzo di un separatore osmotico a flusso semicontinuo a 40 gradi C per due ore, con una soluzione di saccarosio al 60% (p/p). Le strisce di frutto di guava pretrattate sono state poi essiccate a 60 gradi C dal 20% fino all´11% di umidità (peso fresco). I risultati dell´esperimento hanno mostrato che, nei frutti di psidio pretrattati osmoticamente ed essiccati, la conservazione dei carotenoidi è passata dal 66 al 70%, mentre la concentrazione di acido ascorbico si è attestata tra il 20 e il 35% dei valori iniziali
