English. The aim of this paper is to summarize current knowledge on nitrogen nutrition of vegetable species, taking into account not only crop requirements, but also the necessity to protect the environment. After examining the effects of nitrogen deficiency and excess on vegetables, with a particular attention to the qualitative aspect of production, nitrogen uptake by the main crops is reported and the possibility to cope with these demands with minimum impact on environment is discussed. The efficiency of the main nitrogen sources (mineral fertilizers, organic fertilizers, crop residues and cover crops) and the strategies to optimize their use are considered. The paper is completed by citing the main CE regulations providing incentives for a rational management of nitrogen in agriculture; finally, the possible use of models is briefly mentioned

Con questo lavoro si è voluto fare il punto delle conoscenze sulla nutrizione azotata delle specie ortive, tenendo presenti non solo le esigenze delle colture, ma anche la necessità di tutelare l´ambiente. Dopo aver esaminato l´effetto di carenze ed eccessi di azoto negli ortaggi, vengono considerate le asportazioni dell´elemento da parte delle principali specie coltivate e la possibilità di far fronte ai fabbisogni con il minimo impatto ambientale. Viene pertanto evidenziata l´efficienza dell´azoto derivante dalle principali fonti azotate (concimi minerali, fertilizzanti organici, residui colturali, sovesci) e i modi per ottimizzarne l´impiego. Infine, si citano le principali normative CE che hanno incentivato un uso razionale dell´azoto in agricoltura e si fa anche un accenno alla possibile utilizzazione di modelli
