Internal quality evaluation of fruit with X-ray CT

There has been much research into the inspection of the internal quality of agricultural products by the use of X-rays, which gives information regarding the internal structure and water content. In this paper, an experiment to inspect peaches, pears and apples by an X-ray CT scanner was conducted. Three cross-sectional images of each fruit were acquired at 15,30 and 50mm heights from the base, and were compared with the corresponding actual cross-sections. It was observed that not only structural defects such as split pit and rotten core, but also defects based on water content were detected. As for pears, in which the flesh water content distribution has much relation taste, we assumed the method was feasible to obtain information on taste. It was also considered that evaluation of the water core of apples was possible by developing a recognition algorithm. However, it was difficult to detect discolored flesh in apples, because there was not a marked difference between water content of discolored and normal flesh. In addition, CT value distribution showed that water content distribution showed that water content distribution of apples was different from that of peaches and pears.
