Study on the production of high quality edamame [Glycine max]

'Chachamaru', 'Echigo honey', 'Banshaku Chamame' and 'Hiden' are tasty Eadamame cultivars and these yield are stable. Edamame could be harvested continuously from late July to late September using the combination of these cultivars and different sowing times. The suitable harvest time for more tasty and vivid green Edamame was expected by the estimated mean temperature since beginning of flowering. The suitable harvest time of 'Chachamaru' was 750-850 deg C, 'Echigo honey' was 800-900 deg C and 'Banshaku Chamame' was 850-1,000 deg C. The Edamame that harvested in evening had rich sucrose and higher sugar content than in the morning and daytime. But the change of sugar content became smaller in the cloudy day. It is necessary to lower the temperature of Edamame quickly after harvested to keep the freshness of Edamame. And using 'Automatic Edamame Washing and Spin-drying Machine' is effective for this purpose. It was especially effective that using iced-water on the treatment of the machine and using MA packaging to keep the sugar content and tasty of Edamame.
