Soil moisture and shading period were investigated in order to yield vitamin C rich spinach more than 100 kg/a in summer. Custom irrigation of 20 days after sowing, followed by maintenance of soil moisture no higher than pF 2.5, made vitamin C content higher. Stop shading on 20th or 27th day after sowing made yield higher. There were varietal differences in yield and vitamin C content of spinach in summer. We could yield spinach, containing 30 to 50 mg/100 g FW vitamin C , more than 100 kg/a by a combination of the soil moisture control , the stop shading and using high vitamin C varieties in summer.
