Comparison of valuable cuts yield and tissue composition in young bulls and heifers' half-carcasses depending on conformation or fatness EUROP class

Yield and tissue composition of valuable cuts (in the form of pistol) in young bulls' (n=106) and heifers' (n=39) half-carcasses qualified into different EUROP conformation or fatness classes were compared. The results showed that the EUROP conformation class was the most accurate trait to distinguish young bulls' pistol composition since greater carcass conformation simultaneously increased the meat shared in pistol significantly but decreased the share of fat as well bone. However, for heifers the EUROP fat cover class turned out to be such a trait because together with fatness, it decreased the fat content in pistol but the meat content increased. Depending on EUROP conformation or fatness class the comparison between evaluated categories of cattle showed that young bulls' pistol had more profitable tissue composition in relation to heifers at the similar share of pistol in half-carcass.
