[Using electrical technologies for complex processing of raw apple material]

English. The thesis is dedicated to investigating the effectiveness of complex processing of raw apple material by means of using the pulse electroplasmolysis of the apple tissue and electromembrane preparation of the extractive agent to extract pectine substances from apple pomace. At the preset parameters of the electric treatment of the raw apple material an apple juice output after pressing the plasmolized pomace is shown to raise by 20 #percent#. It is found out that the use of the bipolar membrane MB-3, softened water and improved hydrodynamic modes provides an increase in the effectiveness of the process of obtaining the extractive agent and savings in energy consumption. Developed is an apparatus and technology scheme of complex processing of raw apple material using electrical technologies. The scheme is tested and introduced at “Letychiv-Produkt”, Ltd.

Дисертаційна робота присвячена дослідженням підвищення ефективності комплексної переробки яблучної сировини шляхом застосування імпульсного електроплазмолізу пектиновиї речовин із яблучної вичавки. Показано, що при встановлених параметрах імпульсної електророзробки яблучної сировини вихід яблучного соку після пресування плазмолізованої мезги зростає до 20 процентів. Встановлено, що використання біполярної мембрани МБ-3, глибоко пом'якшеної води і удосконалених гідродинамічних режимів забезпечує підвищення ефективності процесу підготовки екстрагента і економії енерговтрат. Розроблена апаратурно-технологічна схема комплексної переробки яблучної сировини із застосуванням електротехнологій випробувана та впроваджена на ТОВ "Летичів-продукт"
