[Assurance of quality and safety of dairy raw materials basing on introduction of Hazard Analysis and Critical Control Point principles]

Production of qualitative and safe milk in the Republic of Belarus is analyzed. Lack of appropriate technological processes (sanitary purification, milking machine functioning and maintenance, hygiene) in the dairy branch causes the low quality of milk. Possibility and expediency of application of principles of Hazard Analysis and Critical Control Point (HACCP) system as one of the modern effective methods of production of safe milk in the agricultural enterprises is analyzed. HACCP system bases on the following principles: realization hazard analysis; determination of critical control points; establishment of critical limits; realization of monitoring procedures; realizationion of corrective actions; elaboration of verification procedures; elaboration of record-keeping and documentation procedures. HACCP system implies the realization of the complex analysis and revelations of the narrowest places in the production process. HACCP helps to realize the constant control over weak chains in the technological process, make the process of the production transparent and ensure the safety of manufactured products.
