Characterization of the basic composition and the content of micro- and trace-elements in classic method Italian sparkling wines

The basic composition and the content of 59 micro- and trace-elements in 58 marketed sparkling wines of the most renowned sparkling producing areas in Italy (Trentino, Franciacorta and Oltrepo Pavese) are investigated. The Inductively Coupled Plasma-Optical Emission Spectrometry and IGP-Mass Spectrometry techniques were applied. Significant differences among zones were ascertained for B, Ca, Cr, Ni, Rb, Na, Sn, Sr, Li, Ti, Zr, Nb, Mo, Te and W, the wines from Oltrepo being the richest in most elements. By the discriminant analysis based on 21 mineral elements, all wines were correctly ascribed to the production area. Differences in the profile of the mineral elements between white still wines of several varieties and sparkling wines from the same region are presented. Vengono riportate la composizione di base e il contenuto - misurato per ICP-OES e ICP-MS - di 59 singoli elementi minerali presenti in 58 vini spumanti metodo classico commerciali delle più rinomate zone classiche italiane: Trentino, Franciacorta e Oltrepo Pavese. Significative differenze tra le zone sono state osservate sia nella composizione di base, sia nei contenuti di singoli elementi, quali B, Ca, Cr, Ni, Rb, Na, Sn, Sr, Li, Ti, Zr, Nb, Mo, Te e W; i vini dell'Oltrepo sono risultati i più ricchi nella maggior parte degli elementi. Mediante l'analisi discriminante basata su 21 elementi minerali, tutti i vini sono stati correttamente attribuiti alla zona di produzione. Vengono riportate anche le differenze compositive tra vini spumanti e vini tranquilli di una stessa regione e le possibili interferenze dovute alle bentonite
