Natural substances of high biological activity belong to over 25 classes of chemical compounds and among them the most important are vitamins and plant phenolics. The most known and widely described is antioxidant activity of phenolics and their protective role against cardiovascular diseases resulting mainly in their stabilizing activity on the walls of capillary vessels. Epidemiological studies indicate that there is inverse correlation between polyphenolics consumption and occurrence of cancer and cardiovascular diseases.
