Need for healthy food in developed countries, followed by advertising in media is becoming imperative. That is why food industry is trying to respond to the consumers needs. Production of food that is safe and less risky for numerous diseases, with low atherogenic potential is very interesting. Purpose of this research is to show some possibilities that can be used in food industry. Also to show results in lowering atherogenic potential represented by atherogenic index, that is parameter depended of cholesterol, total fats in food and fatty acids composition.
